Gelatin Salad Recipe
This makes a great party appetizer or potluck addition.
1 1/2 cups cooked chicken, cut into 1/2 pieces
1 cup onion, diced
1 cup carrot, diced
1 cup celery, diced
1/2 cup red pepper, diced
1/2 cup cucumber, diced
1 cup mayonnaise
1 Tablespoon Dijon mustard
1/4 cup fresh dill, chopped
1 envelope gelatin
1/2 cup boiling water
1/2 cup cold water
Grease 8x12 inch rectangle pan.
Place cooked chicken into one bowl and set aside.
In large bowl, mix together onion, carrot, celery, red pepper, cucumber.
Add mayonnaise, Dijon mustard and dill and mix well.
In small bowl, dissolve gelatin in 1/2 cup boiling water.
Add 1/2 cup cold water and mix well.
Pour half the mixture into the chicken bowl and half the mixture into the vegetable mixture and mix well.
Add the chicken layer
Chill overnight in fridge or for at least 4 hours to allow to set.
