Almond Crunch Cookies With Jam Recipe
A Delicious recipe for almond crunch cookies with jam centers. A very yummy treat.
2 1/2 cups all purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
3/4 cup sugar
3 teaspoons vanilla extract
1 cup almond, chopped fine
1 cup jam.
Preheat oven to 350 degrees F.
In a medium-sized bowl, mix flour, baking soda and salt. Set aside.
Using electric mixer, cream together butter and sugar until smooth. Add egg, and cream 2 minutes. Add vanilla, and mix until combined.
Turn mixer on low speed, slowly add dry ingredients, and mix until fully incorporated.
Form dough into disk shape, wrap with plastic wrap, and refrigerate for at least one hour.
Using a cookie scoop or spoon then roll dough balls into a ball. dip each ball into the almond pieces then place that side up on a a baking sheet.
Place about an inch apart on a baking sheet, then pressed a thumbprint in the top of each cookie and fill each with jam.
Bake 12 to 15 minutes until golden.
